Bubbly!

You wanna drink something yummy? Who doesn’t? Kara and I decided to watch a movie and make a cocktail. I found this yummy recipe on Pinterest and we couldn’t resist! All you need to do is take one bottle of prosecco, 1 cup of cranberry juice and 1 cup of pear nectar and mix it in a pitcher. You might want to chill all the ingredients prior to mixing. Trust me when I say this is super easy and delicious!

Pasta + Spinach + Chicken = Yum!

A sweet friend brought this to me today! This isn’t the best picture, but you get the idea. Yum! I pinned the recipe on my pinterest page and I’m so thankful that she made it for me! It was something I had been wanting to try plus it really helped me out!

Chicken & Spinach Pasta Bake
8 oz uncooked rigatoni
1 T olive oil
1 c chopped onion
1 (10 oz) pack frozen spinach, thawed
3 c cubed, cooked chicken breasts
1 (14 oz) can Italian-style diced tomatoes, drained
1 (8 oz) container Philadelphia chive & onion cream cheese
½ t salt, ½ t pepper
1½ c shredded mozzarella cheese

Prepare rigatoni according to pkg directions. Spread oil on bottom of 11×17 in baking dish; add onion in a single layer. Bake at 375 for 15 minutes or just until tender. Transfer onion to large bowl, set aside.

Drain chopped spinach well, pressing between paper towels. Stir in rigatoni, spinach, chicken, & next 4 ingredients into onion in bowl. Spoon mixture into dish & sprinkle evenly with shredded mozzarella cheese. Bake covered at 375 for 30 minutes; uncover & bake 15 more minutes or until bubbly.

Banana Bites!

I’ve been craving these little suckers ever since seeing them on Pinterest last week!
This is one relatively healthy dessert, especially if you use dark chocolate! All you need is chocolate and bananas! The bananas in the picture show a them topped with coconut. I’d rather leave it alone or top with peanuts! Yum! Let’s make these! Who’s with me??

My friend Josie made these fun little delights for a get together! They were yummy, cute and quite the hit!

S’more Cups

S’more Cups
7 whole graham crackers (1 cup finely crushed)
1/4 cup powdered sugar
6 tablespoons butter, melted
4 bars (1.55 oz each) milk chocolate candy, divided
12 large marshmallows

Preheat oven to 350 degrees F. Place graham crackers into a large resealable plastic bag. Finely crush into crumbs. Combine graham cracker crumbs, powdered sugar, and butter in a small bowl.

Place 1 tablespoon of crumb mixture in each cup of a mini muffin pan. Press crumbs to form shallow cups. Bake 4-5 minutes or until edges are bubbling. Meanwhile, break two of the candy bars into rectangles. Remove pan from oven; place one rectangle into each cup.

Cut marshmallows in half crosswise using shears dipped in cold water. Place one marshmallow half, cut-side down, into each cup. Return to oven 1-2 minutes or until marshmallows are slightly softened. Remove pans from oven to cooling rack; cool 15 minutes. Carefully remove cups from pan. Cool completely.

Break remaining candy bars and place in small microwavable bowl. Microwave on high 1 to 1 1/2 minutes or until melted and smooth, stirring every 20 seconds. Dip the top of each marshmallow in melted chocolate. Turn top-side up and let stand 40 to 60 minutes or until set. Makes 24 cups.

Note: Store the cups in a single layer in an airtight container for up to 1 week. Freezing is not recommended.

For a richer chocolate flavor, substitute dark chocolate candy bars for the milk chocolate.

Each cup has 100 calories and 6 g fat.

Baked, not Fried

Myself along with some good friends have jumped head first into the overwhelmingly huge world of Pinterest. It was decided that we must do some of the projects that we are constantly finding. I mean, we have to justify spending all of this time online. So, for the last few weekends we have been getting together to try new recipes. It’s fun, but problematic when you need to eat in a more healthy manner. For tonight’s grand event I have chosen to make baked egg rolls. They are full of veggies and chicken! To Pinterest or not, that was the question! The answer to that question was: Heck yeah! I was super overwhelmed at first, but now I’m slightly addicted. Pinterest is a website where you create bulletin boards. You can keep up with recipes, dream home ideas, sewing ideas, favorite movies or books and so on. It is very overwhelming at first, but it. is. awesome. I’ve found lots of great gift ideas, sewing ideas, book suggestions and recipes.

Pizza: It’s what’s for dinner!

I had a left over chicken breast, grilled asparagus and onions from dinner last night. So, I took a whole wheat pizza crust, brushed with olive oil and garlic. [Drooling] I topped it with mozzarella, goat cheese, and left over chicken and veggies. Yummy! And, I will get 4 meals for extremely cheap! My kind of dinner!
